How can I do this? All i see are options to choose "featured products", "new products" etc. but nothing about displaying a category list on the main page.

There is nothing currently in place that would display the categories only. We may add this in a 4.0 sub release. i,e 4.0.1

It seems this feature has not yet made it into the build.
This feature is the most logical of all options for displaying products on the front page. All the current options allow for displaying specific products only. Product categories make more sense.
Hope to see it soon.

I feel as if this would be better for SEO as more link "juice" can be passed down to categories. Well, at least for me it would be ideal because those are the pages that I want my visitors to come to.

Well, the default sidebar does have links to categories, so the links issue is already taken care of.
That said, it would be nice to be able to display categories on the home page, so that visitors can get an overall visual grasp of what a site sells.

Agreed, and if your looking for SEO that is not really going to help as much as the various site map tools.

When I was talking about SEO I was thinking that it would be better to put the categories as featured instead of random products because having products their would take some of the websites page rank or "juice" where it would be better to transfer that "juice" only to the category pages(for me at least).
I do acknowledge however that the categories links do indeed pass PR to those categories they point to. Also, I think that since typically the main page has the highest pagerank (and has the most back-links) putting featured categories vs. products makes even more sense because if someone was looking for an mp3 player, and came to your site with a featured mp3 player they might not like it and leave. Where as if they see the mp3 player featured category, and click on it they would have more variety to choose from therefore the chances of conversion would increase.
Just my thoughts..
